Tab into the direction an enemy attack is coming from to parry it. Successful parries lower the enemy's posture. When the enemy's posture is fully depleted, they leave themselves open to a death blow, with which you may either deplete a lot, or all of their health.

Missing a parry will lead to you being stuck in the parry animation for a while, often leaving yourself open to further enemy attacks.
